Lunigiana Saffron: Terre di Bigliolo | Wandering Italy Blog

Terre di Bigliolo is one of those projects overseen by entrepreneur Davide Spediacci, He has taken the land once farmed by his parents and uses traditional techniques to produce the foods once common in the Lunigiana. It is a philosophy I have embraced since coming to Italy, the idea of nurturing the best of the past into the future. In this case Davide is raising potatoes, honey, wheat (for the famous panigacci), farro, and the well-known (to Italians) Fagiolo di Bigliolo. He also produces saffron in October, which we came to see and talk about.
